Cauliflower, roast onion and Welsh Cheddar soup

Making this soup could not be easier ….

Take a large cauliflower and brake into equally sized florets. Place in a large, deep saucepan with one and a half pints (850ml) of boiling water. Also, add all the trimmings from the cauliflower (tender outer stems only), together with three bay leaves and one vegetable stock cube. Bring to the boil and simmer together until the cauliflower becomes tender - approx 7-8 minutes. Remove the bay leaves once the cauliflower is tender, as you do not want these to be blended with the other items, later.


Cauliflower Soup 1


In a frying plan, fry thinly sliced onions until they start to caramelise (this will take about 10-15 minutes on a medium heat). When cooked, put to one side. Remove two thirds of the onions from the frying pan and continue to cook the remaining third of onions until then become dark brown and crispy.

Add two thirds of the roasted onions to the cauliflower and then some grated Welsh Cheddar (I recommend Colliers, which is excellent) to taste. Then, using a liquidiser or hand blender, blend until the soup is thick and silky smooth (this can take approximately 10 minutes, but is worth the wait).

If your not a fan of Cheddar, either Stilton, Roquefort or something similar would work well, but beware of the salt content in these cheeses so only ever season to taste, otherwise you might overdo it!


Cauliflower Soup 3


If you like a little more peppery taste to your soup, add some French mustard to the soup, again to taste, for a good, tasty option.

When serving, place the soup in deep bottom soup bowls, then sprinkle the crispy onions on top (at the last moment otherwise they may sink), which were kept to one side.

Delicious with freshly baked bread, warm from the oven.


This low calerie, low fat soup recipe is suitable for lacto-vegetarians.
